Jeni’s Coconut Macaroon Ice Cream Sandwich

My coworker makes Jeni’s Ice Cream runs every now and then, and she’ll call to see if I want something.  If you don’t know what Jeni’s is, I feel bad for you because it’s probably the best ice cream in the world (local to Columbus, but expanding to other states).  We usually all get the Salty Caramel Macaroon, but last week she called because they had new seasonal varieties.

I looked at the website and quickly settled on the Chocolate Truffle with White Chocolate Peppermint Ice Cream Sandwich.  It was really hard to deviate from the Salty Caramel one, but I went for it anyway.

She brought them back and I stuck mine in the freezer.  Our other coworker had a sample of one and noticed that it wasn’t the same type of cookie as the Salty Caramel sandwich, which is a gluten-free macaroon.  I looked at the ingredients and the Chocolate Truffle one wasn’t gluten-free!  The lady who picked them up got the Snowy Coconut Ice Cream Sandwich for herself and offered to trade with me, which was so sweet.  It would have been my second choice, and I’m so glad I got to try it.  It had an excellent coconut flavor – sweet, but real tasting.  I’m not sure that anything beats the Salty Caramel with Smoked Almonds, but this was super tasty as I would expect from anything from that brand.
