Menu Monday: Chicken Sausage and Blueberries

menu mondayI had a lot of the same things earlier in the week, which mostly consisted of the Apple and Chicken Sausages we get at Costco (they are amazing and healthy).  Even for lunch I would pretty much have one of the sausages and a sweet potato.  I ate tons of blueberries through the week because they were on sale and I stocked up in a major way.  I ate at least a 1/2 pint each day.  I can never get enough blueberries! The weekend consisted of party food pretty much, so things definitely went downhill then!

In other food news, after about 2 weeks of Boof being on her prescription diet food, she lost 2 lbs!  We got her a new large bag, so hopefully that will be enough to get her back to where she should be.  She’s got about 6 lbs to go to get back to the size she was in February.

Monday:  Take out salad for lunch.  We had grilled vegetables, garlic mashed potatoes, and Apple and Gouda Chicken Sausages (for me) and hot dogs (for Lo). 

Tuesday:  Same as Monday (I believe)

Wednesday:  Edamame and sushi with Chuck and Kelley.  It’s pretty hard to pick rolls since I need cooked (for the pregnancy), but not tempura-battered (for gluten-free), but there are a few that are safe and very good.

Thursday:  I didn’t really have dinner after I went shopping.  I ate a bunch of blueberries and some popcorn before I left, and then I just had a chicken and gouda sausage when I got home that night.

Friday:  We had an annual event with friends called Iron Chef, where the guys are split up into teams and have a cooking contest with secret ingredients, multiple courses, and lots of good food.  The women hang out, judge the courses, and help wash dishes as they are needed.  I normally can’t taste a lot of the food because most items aren’t gluten free, but I did get to try a few things.  All of the ladies bring an appetizer-type dish since the teams aren’t able to make enough for everyone to eat – they mostly just make enough for the judges and sometimes a few extras, but everyone passes the dishes around so people can get a taste.  So I had appetizers for dinner mostly – bourbon meatballs, buffalo chicken dip, stuffed mini peppers, fruit, etc.

Saturday:  I was at a friends’ house for most of the day and had an egg and some sausages for lunch and then nacho bar for dinner.  And probably way too many gluten-free cookies in between.

Sunday:  While Lo was at the Indy 500, Boof and I went to our friends’ house and then back and forth to another friends’ (and their neighbors) annual party.  I had a huge, amazing omelet and sausage for brunch with them before we headed to the party, and then we came back and had some ribs and some sort of bean side dish that another friend made.
