Menu Monday: Chicken Week
I’m linking up for Menu Monday again. I’m terrible at menu planning because I have no idea what our evenings will bring, so linking up after the fact is that way I need to go.
We had chicken burgers a few times this week – some that were frozen from Costco, and the rest that were homemade. When I went grocery shopping on Wednesday, Giant Eagle had packs of lean ground chicken reduced to $1.29 or something crazy like that because the sell-by date was the next day. I bought 4 packs and froze three. I randomly came upon a chicken burger recipe the next day and made them that night along with a sweet potato hash that I completely made up. It was a pretty awesome dinner actually!
Monday:
Lunch: Santa Fe Chicken soup and a box of Green Giant Baby Brussel Sprouts.
Dinner: Chicken burger (from Costco) served on fresh lettuce from my salad table, asparagus, and sauteed honey-soy radishes and chard from the garden. There were also waffle fries on my plate, but I ate 2 and decided I was too full so I put them in my lunch for the next day.
Tuesday:
Lunch: Nitrate-free, cheese filled hotdog (from Trader Joes), leftover fries, asparagus, and radishes
Dinner: Baked gluten-free Mac and Cheese made with rice pasta, gf cheese sauce mix, couple of cubes of various cheeses, spinach, and tuna, topped with crushed corn nuts
Wednesday:
Lunch: Hot dog and leftover gf mac and cheese
Dinner: Hot dog and a baked sweet potato
Thursday:
Lunch: Leftover gf mac and cheese
Dinner: Spicy Hawaiian Chicken Burgers (recipe soon) with sweet and spicy sweet potato hash
Friday:
Lunch: Chick-fil-a after my appointment; grilled chicken breast and waffle fries. I had something else that I could eat at work when I got back, but I was too hungry to wait, so we stopped.
Dinner: Spicy Hawaiian Chicken Burger and Potato Hash
Saturday:
Lunch: Grilled cheese
Dinner: Lo went to the Crew game, I went to dinner at Local Roots with friends. I had the Shrimp and Scallops Gluten Free Penne.
Sunday:
Lunch: nothing really…I was out and about and had a Larabar
Dinner: Grilled chicken thighs and corn on the cob. We ran out of propane (which was not a surprise, so they had to be finished on a grill pan on the stovetop. They turned out really well – it’s the first time I’ve brined anything and it seemed to have made a difference.
