Menu Monday: Freezer stash

I’m back to Menu Monday!  I’ve always been terrible at menu planning and coordinating that with our schedules, but I’ve even worse now.  So the only thing I’m able to manage is posting our meals after the fact.  We’re actually getting better about preparing meals now, and I’m trying to focus on using up stuff from the freezers and pantry.  We were getting ready to bring home about 40 lbs of beef that a friend’s husband raised, so I was trying to clean out some items from the freezer, like a corned beef and some ground beef that we’d bought from them in 2013.  We spent the weekend at my parents’ house, so I helped my mom come up with some easy meal ideas (soup and pizza).

Monday:
Lunch:  Leftover Trader Joe’s gluten-free mac and cheese with shredded pork mixed in, and maple balsamic bacon brussels sprouts.
Dinner:  Tacos with rice and beans

Tuesday:
Lunch:  Tacos with rice and beans
Dinner:  Leftover cauliflower crust pizza

Wednesday:
Lunch:  I can’t remember…but it would have been something leftover
Dinner:  Pei Wei spicy chicken and brown rice

Thursday:
Lunch:  Tacos with rice and beans
Dinner:  Corned beef and cabbage “steaks”

Friday:
Lunch:  Leftover cauliflower crust pizza
Dinner:  Turkey, cheese, snow peas, hummus, and crackers snack plate when we got to my parent’s.  I also ate a bunch of trail mix in the car.

Saturday:
Lunch:  At my parents: Santa Fe Chicken soup and cornbread
Dinner:  Cauliflower crust pizza, cauliflower chips (yes, again…)

Sunday:
Lunch:  Late breakfast of eggs, bacon, and toast
Dinner:  Burgers, gf mac and cheese, veggies, and fruit before we left my mom’s.  Later that night I had a bowl of mixed Chex cereals.
