Menu Monday: Lotsa chicken
It’s Menu Monday again. I’m terrible at menu planning because I have no idea what our evenings will bring, so it’s easy to post our meals after the fact.
Almost every single meal had a form of chicken in it, which was completely unintentional and unrelated. We’ve been so busy in the evenings that I haven’t put any thought into meals for the last few weeks.
Monday:
Lunch: Late breakfast omelet
Dinner: Cookout at our house – chicken sausage, grilled corn, squash gratin, avocado caprese salad, fruit, and friend time. It was a fun evening. The caprese salad looks so gross in this next day photo, but I swear it was good.
Tuesday:
Lunch: Chicken sausage, squash gratin
Dinner: Chicken sausage, stir fry veggies, and tater tots
Wednesday:
Lunch: Chicken sausage, squash gratin
Dinner: The rest of the gluten free BBQ chicken pineapple calzone that I thawed over the weekend. This is the picture from when he first made them, so I didn’t have the awesome pineapple salsa, but it was still good.
Thursday:
Lunch: Chicken sausage, stir fry veggies, tater tots
Dinner: Chicken Pumpkin Pasta Bake that I threw together. It turned out better than I expected! I probably could have wiped the rim of my bowl before taking a pic, but….
Friday:
Lunch: 1/2 grilled cheese, leftover pasta bake, tater tots, and some cheetos
Dinner: Leftover Chicken Pasta Bake – It was excellent the night of, but not nearly as good reheated (still good though).
Saturday:
Lunch: Chipotle – 1/2 of a chicken bowl
Dinner: Gluten-free apricot chicken pizza from Take ‘N Bake, which used to be Mama Mimi’s. They’re getting their crust from another place now and it’s so much better!
Sunday:
Lunch: Leftover guten-free apricot chicken pizza
Dinner: Lo made burgers and waffle fries
