Menu Monday: all types of meat
I’ve always been terrible at menu planning and coordinating that with our schedules, but I’ve even worse now. So the only thing I’m able to manage is posting our meals after the fact for Menu Monday.
We hadn’t had chicken in quite awhile because at some point I ran out of chicken in the freezer. I bought a big ol’ pack of chicken breasts and we cooked them all up for a few different recipes this week. We ended up cooking quite a bit this week…chicken pot pie, stirfry, beef and veggie soup, and lamb ragu pasta. For once, I actually cooked about the same amount as Lo! It’s been awhile since that’s happened. Looking back, we pretty much covered all types of meat (chicken, beef, pork, and lamb). I think we need to have some seafood this week.
Monday:
Lunch: Leftover pizza
Dinner: Quinoa crust chicken pot pie
Tuesday:
Lunch: Quinoa crust chicken pot pie
Dinner: Caramelized garlic chicken, roasted regular and sweet potatoes, and green beans.
Wednesday:
Lunch: Quinoa crust chicken pot pie
Dinner: Chicken and stir-fry veggies
Thursday:
Lunch: Chicken and stir-fry veggies
Dinner: Turkey and cheese on a gf bagel
Friday:
Lunch: Veggie beef soup (homemade) and a 1/2 turkey sandwich on gf bread from Danny’s Deli
Dinner: Yabos! I had 1/2 a chicken, rice, and bean bowl and we shared gf boneless chicken wings
(this is the only picture I took of the soup I made, and I didn’t take it to post here…I took it to text to Lo to tell him if he gets a bay leaf in his soup, he shouldn’t eat it)
Saturday:
Lunch: Late breakfast of gf pancakes with coconut syrup from Hawaii and blueberries. A little later I had the other have of the turkey sandwich from Danny’s Deli
Dinner: The other 1/2 of the chicken, rice, and bean bowl from Yabos and some chips and queso.
Sunday:
Lunch: Grilled cheese and pulled pork sandwich. Awesome.
Dinner: Lamb Ragu on pasta (Lo made it)
