Menu Monday: What? meals?
I’m back to Menu Monday! I’ve always been terrible at menu planning and coordinating that with our schedules, but I’ve even worse now. So the only thing I’m able to manage is posting our meals after the fact. Since Jenson was born 4 months ago, we haven’t been great at preparing meals as much as before. We had quite a bit of food that we froze and have been eating well enough, but it was a lot of “what are we going to eat” at 7 or 8 p.m. It sucked having to figure something out after we got home from work in the evenings, but we just didn’t think about it on the weekends.
Now we’re doing better at thawing the meat we are going to use and somewhat formulating a plan on the weekend so it’s easier to put something together at night. We both are happy to eat leftovers, so there are a lot of repeats through the week. Lo has been really stepping up to get dinner together lately – allowing me to hold and play with Jenson as much as I can. Going back to work has been pretty difficult on me – the work part is fine, but being away from him is extremely hard.
Monday:
Lunch: Turkey chili that Lo made on Sunday. It was great.
Dinner: Turkey Tamale Pie that I made on Sunday. It wasn’t as good as I’d hoped. It had a polenta-type crust that was a little too thick and not very flavorful, even though I added spices that weren’t called for. I already have some idea of how I’ll make it next time.
Tuesday:
Lunch: Turkey chili
Dinner: Tamale Pie
Wednesday:
Lunch: Turkey chili
Dinner: Tamale Pie. I also made cauliflower ranch chips and cauliflower pizza crusts for the weekend.
Thursday:
Lunch: Turkey chili
Dinner: Pork and chicken brats with stir fry veggies.
Friday:
Lunch: Pork and chicken brats with stir fry veggies
Dinner: Lo made lots of pizza. He made regular pepperoni, gluten-free pepperoni on cauliflower crust, and a gluten-free BBQ pork on regular crust. The gf BBQ Pork pizza was the best!
Saturday:
Lunch: Pizza
Dinner: Turkey and gouda rolled up in spring roll wrappers (rice paper)
Sunday:
Lunch: Omelet
Dinner: Trader Joe’s gluten-free mac and cheese (frozen – and it was awesome) with shredded pork mixed in, and maple balsamic bacon brussels sprouts. YUM
Oh man all of it looks yummy! It took me awhile to get back in the swing of things after Sam was born. 🙂
