Menu Monday: Mexican and Asian
It’s Menu Monday again. I’m terrible at menu planning because I have no idea what our evenings will bring, so linking up after the fact is that way I need to go. Last week, we ate out a little more than usual and even when we didn’t our meals pretty much consisted of either Mexican or Asian food.
Monday:
Lunch: Spinach Salad with Chicken
Dinner: Homemade Chicken Enchiladas – I wanted to make something that would last for several meals and I had extra chicken breasts and corn tortillas in the fridge.
Tuesday:
Lunch: Chicken Enchiladas (I think…)
Dinner: Chicken Enchiladas
Wednesday:
Lunch: Spinach salad with chicken
Dinner: Pei Wei – Spicy Chicken and a Vietnamese Roll
Thursday:
Lunch: I didn’t really have lunch – we ate a late breakfast of eggs and toast.
Dinner: Cheesecake Factory – We had a gift card that we’ve been sitting on for 2 years and finally decided to go while we were out running errands. They have very little on their menu that is gluten-free, but the manager was kind enough to come over and give me some options. I went with what would be easy – Burger with cheese and avocado, fries. Supposedly they are supposed to have a gluten-free menu soon and are changing the soy sauce they use to be gluten-free, which will add many more options to the menu. I still don’t understand why so many restaurants use gluten-full soy sauce when gluten-free tamari sauce tastes the same and isn’t that much more expensive.
Friday:
Lunch: Late lunch of Chick-fil-a Chargrilled Chicken and a waffle fry. I was STARVING because I had my glucose tolerance at 3:30 and I didn’t eat much all day because of it. All I had was protein (eggs, cottage cheese, and more eggs) and I was so hungry all day at work!
Dinner: Cinco de Mayo – chips with salsa and queso, and 2 chicken tacos. Yum.
Saturday:
Lunch: Late breakfast of omelet and then popcorn at the movies (we went to see Before Midnight).
Dinner: Pei Wei again (we had two B1G1 free coupons to use and they have good gluten-free options). This time I went with Sweet and Sour Chicken, but didn’t eat any of it that night. I had my leftovers of Pei Wei Spicy Chicken and Vietnamese Rolls.
Sunday:
Lunch: Pei Wei leftovers
Dinner: Bean and Cheese Quesadilla
