Menu Monday: Not a week to be proud
It’s Menu Monday again. I’m terrible at menu planning because I have no idea what our evenings will bring, so it’s easy to post our meals after the fact. This week had way more processed food than we are used to, as in, lots of hot dogs. Mine were nitrate-free chicken dogs from Trader Joes and Lo had Hebrew National beef. We were just busy in the evenings and didn’t end up planning anything, so we ended up eating the hot dogs that I cooked earlier in the week. Oh well, can’t win them all. At least the options were healthier versions and not gross, questionable dogs.
Monday:
Lunch: Leftover soup from freezer, chicken sausage, edamame
Dinner: Chicken hot dog (nitrate free), waffle fries
Tuesday:
Lunch: Chicken hot dog, brussel sprouts
Dinner: Mahi mahi burger (trader joes), asian veggies, broccoli potato cake (ikea)
Wednesday:
Lunch: Mahi mahi burger (trader joes), asian veggies, broccoli potato cake (ikea)
Dinner: Chicken hot dog (wasn’t very hungry- I’d snacked earlier)
Thursday:
Lunch: Egg bake, sweet potato and edamame
Dinner: Chicken hot dog, small piece of veggie egg bake, and tortilla chips
Friday:
Lunch: Chicken hot dog and a sweet potato and edamame
Dinner: Party at a friends’ house – pulled brisket and chicken, veggies and dip, tortilla chips and salsa, lots of fruit, etc.
Saturday:
Lunch: We went to Scramblers for brunch – I had a skillet with hash browns, veggies, meat, and eggs.
Dinner: Marcella’s for birthday dinner. I had caprese salad, melted percorino with apples and flatbread, and chicken pizza. All gluten-free. Yum!
Sunday:
Lunch: Last breakfast omelet
Dinner: Dinner at Chuck and Kelley’s to watch Breaking Bad (it’s amazing – if you don’t already watch, you should!). I had a mini crabcake, chicken burger (no bun), squash and zucchini gratin (SO good), salad, and dessert was a peanut butter square.
