Menu Monday: Pizza pizza

I’ve always been terrible at menu planning and coordinating that with our schedules, but I’ve even worse now.  So the only thing I’m able to manage is posting our meals after the fact for Menu Monday.  We’re actually getting better about preparing meals now, and I’m trying to focus on using up stuff from the freezers and pantry.  Our downstairs freezer is now mostly full of beef from the 1/8 of a cow that we bought, and bags of breast milk.

I actually went grocery shopping for the first time since mid-December on Saturday night.  Since going back to work, I’ve struggled with leaving Jenson, nor do I want to drag him with me to the store, so I’ve sent Lo to get things here and there, but I decided to go on Saturday after he went to bed.  It was pretty awesome because the store was empty.  I’m not even embarrassed that it was my idea of a good Saturday night.

Monday: President’s Day
Lunch:  Omelets
Dinner:  Quesadillas with leftover taco meat and beans

Tuesday:
Lunch:  Quesadillas with leftover taco meat and beans
Dinner:  Gluten-free lasagna from freezer

Wednesday:
Lunch:  Gluten-free lasagna from freezer
Dinner:  Beef stew and gf cornbread from freezer

Thursday:
Lunch:  Beef stew and gf cornbread (Lo had pizza)
Dinner:  Omelet (Lo had pizza)

Friday:
Lunch:  Beef stew and gf cornbread
Dinner:  Pizza from Dominos

Saturday:
Lunch:  Brunch with friends at Zen Cha Tea Salon.  I had GF waffles with strawberries, Lo had shrimp and grits.
Dinner:  Homemade gf pizza (Lo had leftover dominos).

Yes, if you are keeping track, that’s a lot of pizza in one week (especially for Lo).  But I couldn’t think of anything else to have on Saturday since he had leftover pizza, and he offered to make me pizza because I ate my entire gf dominos pizza the night before (it was small and thin!).  Disclaimer: Lo is really happy about the amount of pizza consumed this week.

Sunday:
Lunch:  Omelet for brunch, and then I had a piece of pizza later
Dinner:  Caramelized garlic chicken, roasted regular and sweet potatoes, and green beans.
