Menu Monday: Salads and Cauliflower Pizza

It’s Menu Monday again.  I’m terrible at menu planning because I have no idea what our evenings will bring, so linking up after the fact is that way I need to go.  We cooked up a bunch of chicken in the crockpot and I picked all of the lettuce from the salad table because I was afraid it was going to get bitter/bolt, plus I had a head of lettuce to use up from the baby week pictures (and had Lo pick up a container of spinach from Costco), so it was chicken salads for me most of the week.  Sometimes when I get in the mood for salads, I can’t stop.  Lo picked up a pizza to take camping at Mid-Ohio races and had it in the car on the way home on Thursday night and the smell made me want pizza so bad.  Since I had a head of cauliflower from a different week of baby week pics, I wanted to use it up and decided to make cauliflower crust pizza.  It was SO good.  I had enough chopped cauliflower to make it again when a friend was visiting on Saturday night.  It was definitely a veggie-full week!

Monday:
Lunch:  Apple and Gouda Chicken Sausage and brussel sprouts
Dinner:  Salad with lettuce from the garden topped with shredded chicken.  I mixed up a Hawaiian Papaya salad dressing that I bought in Hawaii and kind of forgot about, and it is amazing!

Tuesday:
Lunch:  Salad with lettuce from the garden topped with shredded chicken
Dinner:  Salad with lettuce from the garden topped with shredded chicken

Wednesday:
Lunch:  Salad with lettuce from the garden topped with shredded chicken
Dinner:  Salad with lettuce from the garden topped with shredded chicken

Thursday:
Lunch:  Salad with lettuce from the garden topped with shredded chicken
Dinner:  Cauliflower-crust pepperoni pizza.  Sounds gross…tastes awesome.  I’ll post the recipe soon.

Friday:
Lunch:  Salad with lettuce from the garden topped with shredded chicken
Dinner: Cauliflower-crust pepperoni pizza

Saturday:
Lunch:  Cauliflower-crust pepperoni pizza and popchips.  I had the popchips first because I was running errands and was starving.
Dinner:  Cauliflower-crust pepperoni pizza with spinach, onions, and peppers (I made a second one because a friend was over), and cantaloupe.

Sunday:
Lunch:  Brunch with Chuck and Kelley at Scramblers.  They text at the perfect time because I had just finished walking Boof and was hungry and didn’t feel like making breakfast (lo was out of town).  I had some sort of hashbrown/veggie skillet with yolky eggs on top.  It was fantastic, but a LOT of food.
Dinner:  Incidentally, dinner at Chuck and Kelley’s (though we went out own separate ways in between brunch and dinner).  Boof was being crazy, following me around whining, wanting to get in the car, etc.  I think she knew it was Sunday and was expecting to see them and the dogs, so I asked if we could come over after I finished weeding.  I got in the pool for a bit to cool off and then we had chicken sausages, corn on the cob, spinach salad, and broccoli.  I was so stuffed I didn’t even want gelato!
