Menu Monday: Spinach Week

I’m linking up for Menu Monday again.  I’m terrible at menu planning because I have no idea what our evenings will bring, so linking up after the fact is that way I need to go.

We ate a ton of spinach salads and Mexican a couple of times.  I sautéed some mushrooms and onions to go on top of our spinach salads and threw in whatever else we had in the fridge each day.

Monday:
Lunch: Grilled chicken thighs and corn on the cob
Dinner: Mexican at some random restaurant.  We met friends to visit a friend in from Florida.  It was pretty much the least impressive Mexican meal I’ve ever had.  I had 2 grilled tacos which consisted of grilled chicken, pico de gallo, and salsa.  The guac was gross – I don’t even know how that’s possible

Tuesday:
Lunch: Spinach salad with chicken breast
Dinner: I made Salmon burgers because they’d be quick and easy.  I had mine on a spinach salad and Lo had his on a bun with a salad.  We also had broccoli.salmon burgers 3

Wednesday:
Lunch: Spinach salad with salmon burger on top.
Dinner: We went to Costco that evening so we stopped at Jason’s Deli on the way home so I could grab a sandwich.  Lo had a volleyball game, so he probably had pizza.

Thursday:
Lunch: Spinach salad with chicken breast
Dinner: Spinach salad with chicken breast

(not the spinach salads from this week, but similar minus the avocado)

Friday:
Lunch: Spinach salad with chicken breast
Dinner: Pizza night.  Costco Take N’ Bake and Gluten-free BBQ Chicken with Pineapple

Saturday:
Dinner: Mexican again at Azteca grill.  We normally go to the Powell location, but went to Dublin because it was on the way to bowling with my sister and nephew.  We weren’t impressed with the new location for a variety of reasons, but my 2 tacos and the cheese dip were okay.

Sunday:
Dinner:  Tofu Miso soup and Spinach salads at our friends house.  We didn’t get around to watching a movie, but we got caught up with each other since they’d been away for 3 weeks.
