Menu Monday: Week of Repeats
It’s Menu Monday again. I’m terrible at menu planning because I have no idea what our evenings will bring, so linking up after the fact is that way I need to go. We had a lot of repeated meals this week between several days of homemade lasagna that we’d previously frozen, brisket for days, and Yabo’s Tacos twice in a row.
Monday:
Lunch: 2 beef and bean tacos
Dinner: Homemade GF Lasagna (from freezer)
Tuesday:
Lunch: Homemade GF Lasagna (from freezer)
Dinner: Chick-fil-A – we had been to Home Depot and Lowe’s to look at flooring and didn’t have a plan (or time to come up with one)
Wednesday:
Lunch: Homemade GF Lasagna (from freezer)
Dinner: Brisket – the sides weren’t done in time for me to each them too. (and some popcorn I snacked on earlier)
Thursday:
Lunch: Brisket, polenta, and cabbage au gratin
Dinner: Brisket, polenta, and cabbage au gratin
Friday:
Lunch: Brisket, polenta, and cabbage au gratin
Dinner: Yabo’s Tacos; 3 chicken tacos and some chips and queso. It was SO good! It was the first time went and we loved it. They have an amazing chipotle sauce. I could eat there everyday. If you’ve never been and there’s one nearby. Go. Today. (we went to the new one on Powell Rd.)
Saturday:
Lunch: Cabbage au gratin
Dinner: Incidentally, Kelley and I needed to eat something before our gf baking class, so she suggested Yabo’s. I told you I could eat there everyday…so I said “absolutely!” This time 2 tacos and we split chips and queso. Lo had brats at the Crew game for Buck-a-Brat night.
Sunday:
Lunch: Our niece’s first birthday party! I had a hot dog, taco dip, veggies, and bbq chips
Dinner: Pulled pork and brisket sundaes! Our friends came over for dinner after they watched Boof for us during the day. The sundaes are made with mashed potatoes, topped with pork and/or brisket, BBQ sauce, mixed veggies (including green beans from the garden), cheese and bacon pieces. YUM. I got one at the State Fair a few years ago and loved it. I didn’t get a picture this time, but this is the first time I made them.
