Raw Somoa Bites
I can’t say for sure where I saw this recipe first because I’ve seen it on a ton of blogs since then. Balls are all the rage these days.
This is the recipe that I had jotted down a long time ago, but I really didn’t follow the measurements when making them. They are pretty hard to screw up. My dates seemed a little hard, so I soaked them in some very hot water for 5 minutes or so to soften them for easier processing. I used a magic bullet type processor, but an actual food processor would be easier and faster. I just had to scrape down and stir a lot to get everything mixed together. If you want a protein boost you could easily stir in a 1/2 scoop or so of protein powder. They taste very similar to Girl Scout Somoas, which I swear used to be called Caramel Delights. Or is it vice versa? I can’t eat them anymore because I’m a glutard, so I can’t remember what they are called now. I’m happy with these healthier ones though!
Gluten-Free Raw Samoas
1 cup dates (I used Sunsweet)
1/4 cup unsweetened shredded coconut
1/8 tsp. pure vanilla extract
less than 1/4 tsp salt
3 T. chocolate chips
Blend all ingredients in your food processor, chopper, or blender. You may need to scrape down the sides a few times or scrape the dough out of the blades to completely mix. If too sticky, add more coconut. Roll into balls and flatten slightly. Drizzle with extra melted chocolate, if desired, or if you are less lazy that I am.
I promise…you cannot taste the dates – just chocolatey-coconut goodness.
